Tagliatelle with Grana Padano PDO Riserva, Peas & Speck

Ingredients

  1. Whole egg tagliatelle: 250 g
  2. Grana Padano PDO Riserva: 100 g
  3. Speck (smoked ham): 6 slices
  4. Extra virgin olive oil: 2 tbsp
  5. Black pepper: to taste

Instructions

  1. In a frying pan, heat the extra virgin olive oil and add the finely chopped onion. Sauté over low heat until the onion turns golden brown.
  2. Add the cooked tagliatelle (in salted water), cooked peas, and sliced speck to the pan. Toss everything together well. For extra flavor, you can add some of the pasta cooking water and toss until the sauce emulsifies.
  3. Plate the pasta and generously sprinkle with freshly grated Grana Padano PDO Riserva. Add black pepper to taste and serve!
