Crispy Dumplings with Grana Padano PDO

Ingredients

  • Grana Padano cheese: 15g
  • Ground pork: 150g
  • Cabbage: 200g
  • Garlic: 1 clove
  • Ginger: 5g
  • Chives (or garlic chives): 30g
  • For the Seasoning (★):
    • Soy sauce: 1 tablespoon
    • Sesame oil: 2 teaspoons
    • Sugar: 1 teaspoon
    • Sake: 1 teaspoon
    • Salt and pepper: to taste
  • Dumpling wrappers: 25–30 pieces
  • Rice oil: 1 tablespoon
  • Sesame oil: 1 tablespoon
  • Boiling water: 100ml

Instructions

  1. Prepare the Cabbage: Finely chop the cabbage and sprinkle it with salt. Massage it and let it sit for about 10 minutes, then squeeze out any excess water.
  2. Prepare the Other Ingredients: Finely chop the chives and ginger. Grate the garlic and Grana Padano cheese.
  3. Make the Filling: In a bowl, combine the ground pork, prepared cabbage, chives, ginger, garlic, and Grana Padano. Add all the ingredients for the seasoning (★) and mix everything well.
