This unique pizza combines the richness of Grana Padano PDO with the sweetness of grapes and the crunch of walnuts. It’s a savory-sweet combination perfect for those who enjoy bold, creative flavors.

Ingredients

  • Flour: 800g
  • Water: 500ml
  • Grana Padano PDO (grated): 200g
  • Grapes (halved): 150g
  • Walnuts (chopped): 50g
  • Beer yeast (or dry yeast): 5g
  • Extra virgin olive oil: to taste
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. Activate the Yeast: In a bowl, dissolve the beer yeast (or dry yeast) in room temperature water using a fork.
  2. Prepare the Dough: Sift the flour into a large bowl. Gradually add the yeast and water mixture, mixing with your hands until it starts to form a dough. Add salt and a drizzle of extra virgin olive oil, continuing to knead until the dough is soft, smooth, and uniform.
  3. Rest the Dough: Cover the dough with a cloth and let it rest for at least 1 hour, allowing it to rise.
  4. Shape and Bake the Pizza: After resting, transfer the dough to a floured surface. Divide it into four equal portions and use a rolling pin to shape each portion into a round pizza dough. Preheat your oven to 200°C (400°F). Bake the pizzas for 20-25 minutes, or until they are golden and crisp.
  5. Assemble the Pizza: Once the pizza dough is baked, remove it from the oven. Top it with grated Grana Padano PDO, halved grapes, chopped walnuts, a drizzle of extra virgin olive oil, and season with salt and pepper to taste.
